Cream Cheese Icing

6 oz cream cheese
2 oz unsalted butter
5 oz sifted icing (superfine) sugar
1 tsp lemon juice
a few drops of vanilla essence

Whisk cheese and butter, then beat in other ingredients.

Use to ice passion cake.
