Passion Cake

4 large eggs
6 oz soft brown sugar
3 oz thick honey
8 fl oz corn oil
9 oz plain flour
2 level tsp bicarb.
1/2 tsp salt
4 oz chopped walnuts
10 oz grated carrot
1 level tsp cinnamon

Beat the eggs, sugar and honey untillight, then gradually beat in the oil.
Sift flour, cinnamon, salt and bicarb., and blend in to the beaten egg mixture, together with the nuts and carrots.

Grease and flour two 8inch cake tins (at least an inch deep).
Divide the batter evenly between the tins.
Bake 35-45 mins. at 350 F

Cool for 5mins before turning out.
Cool completely, then ice with cream cheese icing.
