Stilton Soup

1 medium onion, chopped
2 sticks celery, chopped
1 oz butter
2 Tablespoons plain flour
32 fl oz chicken stock
10 fl oz milk
8 oz stilton, crumbled
4 Tablepsoons, double crem
salt, pepper, cayenne

Sautee the onion and celery in the butter.
Stir in the flour and cook for a minute. remove from heat and blend in the stock. Bring to the boil, reduce heat and simmer 15 mins.
add milk, cream and cheese. Season. Do not boil.
Liquidize. Reheat. (Do not boil.)
